#1-This is mostly for my family because we grew up eating yummy German Pancakes. I found a new one with a twist...German APPLE Pancakes! They were delicious!
4 eggs
3/4 c. all-purpose flour
3/4 c. milk
1/2 t. salt
1/4 c. margarine or butter
2 medium apples, thinly sliced
1/4 c. sugar
1/4 t. ground cinnamon
Heat oven to 400. Place 2 round layer pans, 9x1/12 in, in oven. (I used a 9x13 rectangle pan). Beat eggs, flour, milk, and salt in small mixer bowl on medium speed 1 minute. Remove pans from oven. Place 2 T. margarine in each pan; rotate pans until margarine is melted and coats sides of pans. Arrange half the apple slices in each pan; divide batter evenly between pans. Mix sugar and cinnamon; sprinkle 2 T. sugar mixture over batter in each pan. Bake uncovered until puffed and golden brown, 20-25 minutes. Be sure to serve them as soon as they're done, for they sink rapidly, like souffles. Makes 2 large pancakes (4 servings).
#2-The sweet potato pancakes in Deceptively Delicious are so, so yummy! Zander has been asking for mashed potato pancakes ever since.
#3-The banana bread with cauliflower from Deceptively Delicious is also yummy. Although, after it's been sitting on the counter for a week, it is as Aaron described it, "the most rotten, nasty thing he's ever tasted, like licking mold." (and he served his mission in Mexico folks, lots of strange food there). I personally didn't taste it; the smell however may prevent me from trying the recipe again for quite a while!
#4-Three year olds love to help in the kitchen, and they can in fact be quite the good little helpers. (Zander does request the food network over cartoons at times, though).
#5-One of my new year's resolutions was to cook dinner at least three times a week. I need to recommit.

This is great. We too grew up with German pancakes and Dutch babies in our family. I will have to try the recipe. How did you get your child wanting to watch the food network channel. Please tell me that secret, would love to try.
